Brinjal or Eggplant as it is commonly known in the world, is quiet popular. In India, this vegetable is called as Baingan and loved by all age groups. Brinjal is good for maintaining the Cholesterol in the human body.
Rice :- 3 cups
Mustard seeds :- 11/2 tsp
Curry leaves :- a few
Vegetable oil :- 3 tsp
Eggplant (Brinjal) :- 3 cups
Green chilies :- 3 tsp, sliced finely
Salt :- as per taste
Turmeric powder :- 1 tsp
Lemon Juice :- 1 tsp
Method Of Preparation:
1) Take the rice, boil it and keep it aside.
2) Take a large pan and in it fry the curry leaves, mustard seeds, green chilies and brinjal. Then on low flame keep stirring it for ten mns.
3) To this now add turmeric powder and salt and cook it for close to 5 mns. Take this off the flame and to this add lemon juice and stir well. Add this to the rice and keep stirring it so that the flavor reaches each and every grain.
